We have an ongoing ticket logged with 8x8 support for this issue, and have only been told that they are treating it as a priority, and that their 'entire global organisation' is aware of the issue - so I think they must have had more than a few complaints about this.
Although we have not had any progress updates on the ticket for some time.
I can confirm we have the same experience as you, in that pairing with a bluetooth headset is a workaround, and that calss via whatsapp/dialler are ok, so the microphone itslef is working.

We have excactly the same problem here, however with the Samsung A52, A53 series.
Android version is 14 and One UI 6.0
Is the device paired with a bluetoothe headset there is no problem.
The problem only occurs with the 8x8 Work mobile application.
Calling via whatsapp or an ordinary call via 3g/4g gives no problem, then the microphone works normally.

I'm unsure if the lack of responses indicate nobody else is having this issue, or that nobody else is using 8x8 Work mobile with S21 or S24 devices on android 14...

We've been having issues with the microphone volume being extremely low on any Samsung Galaxy S21 devices updated to Android 14 One UI 6.
Once these devices are updated, the person using this device can no longer be heard by the other party.
We have tested with multiple S21 devices and all have the same problem after receiving the update. All worked fine previously.
Only the 8x8 Work app is affected. Calls using the Phone app work at normal microphone volume.
We have now taken delivery of brand new Galaxy S24+ devices, and to our disapointment the issue is still present using these devices.
I am curious if anyone else has had this issue and may have a fix ?
We have tried the usual re-install of the app, disabling echo cancellation - but stil the same issues.
